Sourdough grilled cheese is one of the quickest comfort foods you can make! Cheddar cheese melts between slices of crispy, golden sourdough for a cozy, easy meal you can fix in minutes. Give it a try with your leftover sourdough – you won’t be sorry!

For several years growing up, my dad would make grilled cheese sandwiches for lunch on Saturdays. We would get back from swim lessons, shivering and cold, eager for a piping hot sandwich that would warm us right up. This recipe has a few slight tweaks (we didn’t have a sourdough starter at the time, so no homemade bread then) but it still offers the same cozy comfort!
One of the great things about grilled cheese is that it takes under 10 minutes to make, is easy to customize, and will fill you up in a flash. Serve with a side salad, dip it in your favorite soup or just enjoy on this grilled cheese on its own!
What kind of bread is best for grilled cheese?
Without a doubt, sourdough is the best option for grilled cheese! Sourdough forms the perfect golden crust that’s crisp and crackly and contrasts well with gooey melted cheese. While it’s easiest to use a loaf of sourdough sandwich bread, you can also use regular overnight bread, garlic bread, or whole wheat bread. For an extra special twist, try using a sourdough croissant!
What cheese is best with sourdough?
Nearly any cheese will pair well with sourdough. In this recipe, I recommend a classic cheddar cheese with a little surprise of cream cheese for fun. Feel free to mix it up though! Havarti, Swiss, mozzarella, Colby jack, pepper jack, parmesan, goat cheese, or feta would all be excellent options too!

What to serve with grilled cheese?
While grilled cheese makes a satisfying meal on its own, you can also serve it with a side soup or salad. Tomato soup is always a classic, but you can also mix it up with red pepper or carrot soup too.
Grilled Cheese Variations
You can basically add whatever you want to your grilled cheese. Here are some fun ideas to get you started!
- Havarti, deli turkey, pesto, and parmesan
- Mozzarella, sliced peppers (toast them in the pan first!), spinach, and a drizzle of balsamic vinegar
- Cheddar, bacon, tomatoes, and mustard
- Swiss, deli ham, cream cheese, and strawberry or raspberry jam

Tips for making Sourdough Grilled Cheese
- If you’re cooking for a crowd, try using an electric griddle to cook multiple sandwiches at a time and speed up the process.
- Resist the temptation to turn up the heat past medium! Grilled cheese really doesn’t take that long to cook, so just be patient and cook on medium heat. This will allow the cheese to melt completely without burning the bread.
- Mix it up by trying different cheese or adding meat or veggies!
- Store any leftovers in an air-tight container in the fridge for 1-2 days. Obviously, you’ll want to heat it up before eating it. 🙂
- If you’re allergic to eggs, just use butter or ghee instead of mayo to spread on the sourdough.

All you need is a skillet and a spatula to flip your sandwich! However, if you want to make your grilled cheese a bit fancier, you could use a panini press instead of a regular skillet.

- 2 slices Sourdough Sandwich Bread
- 2 slices medium cheddar cheese
- 2 tbsp cream cheese
- 1 1/2 tbsp mayo

How to make Sourdough Grilled Cheese
Heat a skillet over medium heat.
Spread mayo on one side of each slice of bread. Place the slices of bread with the mayo side up in the skillet and let them warm for 3 minutes.
Flip the slices of bread in the skillet. Top each slice with a slice of medium cheddar cheese.
Spread the 2 tbsp of cream cheese on top of the cheddar cheese on one slice of bread.
Use a spatula to flip the slice of bread with just cheddar cheese onto the other slice. The cheese should be sandwiched between both slices of bread.

Let the sandwich cook for 2 minutes, then flip and let cook for 2 more minutes so both sides are golden brown. Remove from the heat and serve!
