- Make sure your veggies are as fresh as possible! This salad has pretty minimal dressing, so you’ll really be able to tell if your veggies aren’t quite ripe or are overripe.
- Feel free to mix up the herbs or vinegar depending on what you have on hand. For example, you could use Balsamic vinegar instead of red wine vinegar, or basil instead of dill.
- This salad will keep in the fridge for up to five days if you store it in an air-tight container. (The leftovers make a great lunch!) That being said, this salad definitely tastes best if you eat it within a day or two of making it.

- 1 English cucumber – These cucumbers typically have fewer seeds, making them a little more enjoyable to eat. 🙂
- 1 cup cherry tomatoes – You can also use 2 Roma tomatoes if you prefer.
- 1/4 cup crumbled feta cheese – Feta is perfect for adding a little saltiness and creaminess to this salad.
- 1/4 cup red wine vinegar – Just a little bit of vinegar provides enough acidity to pull the salad together. You can also use Balsamic vinegar instead if you prefer.
- 1/4 cup fresh dill – If you don’t have fresh dill, you can substitute 2 tbsp dried dill. Or try using different herbs! Basil or oregano would both be great options.
How to make Cucumber Tomato Feta Salad
Cut the cucumber into round slices and then cut the rounds into quarters. Add the cucumber quarters to a bowl.
Cut the tomatoes in half and add them to the bowl with cucumbers.
Roughly chop the dill and sprinkle it over the cucumbers and tomatoes.
Sprinkle the crumbled feta cheese over the salad and then drizzle the red wine vinegar over the top.
