This easy Peach and Burrata Salad combines fresh fruit, a homemade dressing, and creamy cheese to make a vegetarian meal everyone will enjoy!

What is Burrata?
Burrata is an Italian cheese very similar to mozzarella. It has a soft outer casing and the inside is a creamy mixture of curds called stracciatella. Burrata tastes delicious with stone fruits and berries, but it also pairs well with tomatoes and leafy greens like spinach. You can serve it on pizza, with pasta, or even in a salad like this.
Dressing for Peach and Burrata Salad
Since the burrata is so creamy, a vinaigrette dressing pairs well with the salad to balance out the flavors. Balsamic or Italian dressings add just the right amount of acidity to the salad. You can also use a dressing with fruit in it, which is what this recipe does. Blueberries, red wine vinegar, honey, and olive oil blend to make a yummy dressing that perfectly balances out the creamy burrata without being too acidic.

What to serve with Peach and Burrata Salad
Toasted bread with olive oil or butter makes an excellent companion to this salad! If you have any sourdough overnight bread or baguettes on hand, slice them up, drizzle with olive oil, and toast for the perfect addition to your meal. For extra protein, you can also serve it alongside grilled chicken or steak.
Tips for making this salad
- To give the peaches extra flavor, I like to grill them before adding them to the salad. You can do this on a regular grill or a panini press. This is totally optional, but it does make the peaches look fancier and adds a different flavor.
- This salad is pretty simple, so make sure to use fresh, ripe fruit to get the most flavor out of your meal.
- If you’re serving this salad as a main course, feel free to add a source of protein such as grilled chicken or steak to make this meal more filling. You can also just serve it as an appetizer or a light lunch.
- The dressing will keep for up to a week at room temperature. It really tastes delicious will nearly anything, so use any extra vinaigrette to dress up your favorite salads!

Tools you will need
To make this yummy salad, you will need a blender, a cutting board, a knife, a bowl to serve the salad, and salad tongs.
If you choose to grill the peaches, you’ll need a grill or a panini press.
Ingredients you will need:
You don’t need many ingredients, but they pack a lot of flavor. 🙂
2 peaches – You can peel them if you want or leave the skins on – it’s up to you.
2 cups spinach – If you want, you can remove the stems to make the spinach easier to eat.
1/3 cup red wine vinegar – You could also use white wine vinegar, but the red wine vinegar pairs well with the blueberries. 2 cups blueberries – Fresh not frozen!
1/4 cup olive oil – Avocado oil would work too.
1 tbsp honey – Raw or filtered. We bought some from a blueberry farm that was simply delicious!
4 oz burrata – You can use a ball of burrata or substitute mozzarella.
How to make Peach and Burrata Salad
To make the dressing:
Combine 1 cup of the blueberries, the red wine vinegar, the olive oil, and honey in the bowl of a blender.
Blend on medium speed to make the dressing. You can store this dressing at room temperature until you’re ready to use it.


To grill the peaches: (This is an optional step, but it adds a fun flavor!)
Heat a grill to medium heat and grease with olive oil. Slice the peaches thinly and lay them on the grill. Grill them for 3-5 minutes on each side so that the peaches have black grill marks. Remove from grill and set aside until you’re ready to make the salad.
Alternatively, you can grill your peaches on a panini press. Place the peach slices on a greased panini press, and cook for 3-4 minutes per side on medium heat. Make sure to grease both sides of the panini press so the peaches don’t stick!
To assemble the salad:
On a large plate or bowl, layer the spinach.

Top with the grilled peaches.

Add the remaining cup of blueberries.
Place the ball of burrata in the middle of the salad. You could also use a fork to shred it into pieces and plate it that way too.

Drizzle with the blueberry dressing and enjoy!

Instructions

- In a blender, add 1 cup of the blueberries, red wine vinegar, olive oil, and honey. Blend on medium speed until a smooth dressing forms. Set aside until you're ready to serve the salad.
