- 2 medium carrots
- 2 cloves of garlic
- 1/4 cup of tahini
- 1 15oz can of chickpeas (they might also be called “garbanzo beans”)
- Juice of 1/2 of a lemon
- 1 tsp of cumin
- 2 tbsp of olive oil

How to make Carrot Hummus
Preheat the oven to 425 degrees Fahrenheit. While the oven heats, wash and peel the carrots. Chop them into small circles and place them on a baking tray lined with parchment paper or foil.
Bake the carrots for 15 to 20 minutes, until they are soft when pierced with a fork.
While the carrots bake, drain the chickpeas and place them in a blender jar. Peel the garlic and add the cloves to the jar as well.
Once the carrots are done, add them to the blender jar along with the tahini, lemon, cumin, and olive oil.



Blend on medium speed for about 45-60 seconds, until the hummus is smooth and creamy. Use a spatula if you need to push the hummus down the sides of the blender jar so that all the chickpeas get blended. If the hummus seems too thick, you can add more olive oil.
