Sourdough tortillas are an easy way to use up sourdough discard! Thin yet flexible, these tortillas make a great base for tacos, fajitas, burritos, and quesadillas. You only need five ingredients: flour, sourdough starter, olive oil, salt, and water.
Tacos are probably one of my favorite foods ever. (Right up there with asian chicken wraps!) They’re so fresh and bright and always delicious. I love the combination of guacamole, salsa, chicken, fresh veggies, cilantro, and lime – yum!
However, I really don’t like it when my tortilla falls apart when I try to eat it. Tacos can be messy, but they shouldn’t split in half when you take the first bite. That’s what makes these sourdough tortillas so great. Kneading the dough for tortillas for just 5 minutes gives the dough elasticity and durability that allows them to hold all your favorite fillings without becoming soggy or falling apart.
Even if you don’t like tacos, you can still enjoy these tortillas. Fill them with meat, cheese, and veggies to make a quick lunch wrap. Stuff with eggs, salsa, and sausage to make a yummy breakfast burrito. Spread with peanut butter and sliced banana for a fun snack. The options are endless!
Can you make homemade tortillas without a tortilla press?
Don’t think that just because you don’t have a tortilla press, you can’t make your own tortillas. You actually can using some basic cooking supplies. Just place the ball of tortilla dough on a sheet of parchment paper and cover with another sheet of parchment paper. Use a rolling pin to roll the dough into a thin, flat oval. It’s that easy!
Can tortillas be healthy?
Yes, tortillas can be a healthy addition to your meal. Generally, corn tortillas will have more nutrients and fiber than flour tortillas. However, using sourdough discard can boost the nutritional content of your tortillas, especially if you allow the dough to ferment before cooking the tortillas.
The bacteria in the sourdough starter can break down the gluten in the flour, making it easier for your stomach to digest. This also lowers the glycemic index of the tortillas, which will cause less of a spike in blood sugar after you eat them. Because of these factors, sourdough tortillas are a healthy option you can feel good about enjoying!
How do you know when to flip a tortilla?
Usually, you cook a tortilla for one minute on each side. You can tell when to flip it when you see little bubbles of air forming in the tortilla. At this point, you can flip it. Then after about a minute, flip the tortilla back over and look for golden brown circles. If both sides have those, your tortilla is done and ready to come off the skillet.
Tips for making Sourdough Tortillas:
- If you don’t have a stand mixer, you can knead the dough by hand for 5 minutes.
- You can make the tortilla dough ahead of time and refrigerate it for up to 24 hours. Then, you can cook up fresh tortillas for dinner!
- Use these tortillas for tacos, wraps, fajitas, enchiladas, quesadillas, burritos – the only limits are your imagination!
- These tortillas will stay fresh for a week if you keep them in an air-tight container in the refrigerator.

To make these tortillas you will need a stand mixer, rolling pin, skillet, and parchment paper.
Ingredients you will need
You only need a few ingredients from your pantry plus sourdough discard.
- 2 1/2 cups flour – you can use all purpose or whole wheat flour
- 1/2 cup sourdough starter discard – this is starter that you would normally throw away before feeding your starter
- 2 tbsp olive oil – you can also use coconut oil, avocado oil, or melted butter
- 1 tsp salt – Kosher or Himalayan
- 3/4 cup water
How to make Sourdough Tortillas
In the bowl of a stand mixer, add in the flour, sourdough discard, olive oil, salt, and water.
Mix for 5 minutes, until the dough forms a smooth ball around the dough hook. At this point you have two options. You can cover the tortilla dough and refrigerate it for up to 24 hours before cooking. This will give the sourdough a chance to ferment, reducing the gluten content of the tortillas. If you want though, you can also move on to cooking the tortillas now.
Divide the dough into 16 pieces. Roll each piece into a ball, and place them on a sheet of parchment paper.
Turn on a skillet to medium heat. While the skillet heats, use a rolling pin to roll each ball out into a thin, flat circle. I sandwiched each ball of dough between two sheets of parchment paper when I rolled them out to keep the dough from sticking to the rolling pin.
Cook the tortillas one at a time for about one minute on each side.
When they are done, golden brown circles will riddle the surface, and tortillas may puff up slightly in the pan. Place the tortillas in a towel to keep warm until you’re ready to eat them!
