When we were younger, my mom used to read aloud to us every night before bed. From a cabin in Wisconsin to the castle of Cair Paravel, from ordinary princesses to radiant pigs, we all loved listening to her read and always begged for just one more chapter. One summer, she read aloud Adventures with Waffles by Maria Parr, and now whenever we make waffles, I can’t help but think of the book.
Of course, even if you haven’t read the book, you can still enjoy these fluffy sourdough waffles, and I bet everyone else in your home will too. Drizzled with maple syrup and topped with fresh berries, they’re definitely hard to beat! While I can’t say they’re super healthy, you can feel better about enjoying them knowing that they’re made with wholesome ingredients, sweetened with honey, and free of preservatives or artificial additives. You’ll have a hard time going back to Eggo after these. 🙂
Is it better to use milk or water in waffles?
It’s definitely better to use milk in waffle batter! It adds extra flavor, richness, and sweetness that you won’t get by just using water. Buttermilk, whole milk, 2%, and even skim milk all make great options. If you need to make your waffles dairy-free, you can also experiment with plant-based milks such as almond, coconut, or oat milk.
What toppings go well with mini waffles?
Fresh fruit, maple syrup, whipped cream, and chocolate chips all make great toppings for mini waffles. If you’re looking for some inspiration, here are a few ideas to get you started:

Tips for making Mini Sourdough Waffles
- While there is something so cute about mini waffles, you can also use this recipe to make regular waffles if you prefer. This recipe will likely make 3-4 regular waffles, so you might need to double it depending on how many people you’d like to feed.
- These waffles definitely taste best the day you make them, but you can store leftovers in the fridge in an air-tight container for 3-4 days.
- You can also freeze these waffles for a great Eggo alternative 🙂 Just keep them in an air-tight container in the freezer for up to 3 months. Re-heat them in the oven, microwave, or toaster for a quick and yummy breakfast.
Tools you will need
To make these mini waffles, you’ll need a mini waffle iron, measuring cups, a mixing bowl, and a spatula.
Ingredients you will need
- 1 cup flour – All-purpose flour works best here, but you can also do a mixture of all-purpose and einkorn flour if you like.
- 1/2 cup sourdough starter – This can be active or discard sourdough starter.
- 1/2 cup milk – You can use whole milk, 2%, skim, buttermilk or even your favorite milk alternative. Whatever you like best!
- 1/4 cup honey – You can also use maple syrup if you prefer.
- 1 egg
- 2 tbsp coconut oil – Butter will also work here if you like.
- 1 tsp vanilla – Can’t forget the vanilla!
- 1/4 tsp salt – Kosher salt works well for this.

How to make Mini Sourdough Waffles
In a medium bowl, whisk the egg together with the milk, honey, melted coconut oil, and sourdough starter. Make sure you don’t have any lumps of sourdough left in the batter!
Stir in the flour, vanilla, and salt until the batter just comes together. Cover the waffle batter and place it in the fridge overnight.

In the morning, preheat your waffle iron and grease it with more coconut oil or butter.
Measure 1/4 cup of the waffle batter into the waffle iron and use a spatula to spread the batter to the edges of the iron.
Close the waffle iron and let it cook for 3-4 minutes, or until the waffle iron beeps. Remove the waffle from the iron using a fork or knife.


Repeat steps 5-6 with the remaining waffle batter. You should end up with about 8 mini waffles.
