Our neighbor knows how to cook the most delicious dishes – from crepes to fish to lemon ice cream to a Thanksgiving turkey – and she graciously taught us some of them while we were all in quarantine.
One of these recipes included a special chocolate bundt cake that her family makes for birthdays every year. This chocolate chip bundt cake is slightly adapted from her recipe, but it still is sure to knock your socks off! We love it so much that it regularly makes an appearance for birthdays at our house too.
Sour cream and chocolate syrup are the secret ingredients to keeping this bundt cake moist and gooey. Sprinkled with powdered sugar and served with whipped cream, this bundt cake will quickly become a new family favorite. Gather your ingredients and get baking!
Why are bundt cakes so moist?
Bundt cakes are moist because they have a high ratio of fat to flour. In addition to coconut oil, this recipe uses sour cream and chocolate syrup to keep the bundt cake from drying out.
When baking bundt cakes, it’s also important not to over-bake them. Test the bundt cake with a toothpick about five minutes before the recipe suggests to take it out of the oven. If the toothpick comes out clean, remove the cake from the oven, even if it hasn’t baked the full time.
Should you let a bundt cake cool before flipping it?
Yes! Let the bundt cake cool for 10-15 minutes before you flip it. Also, make sure to run a knife around the edges of the cake pan to loosen the cake before you try to remove it. Place a plate on top of the pan and invert the pan to release the cake.
Tips for making Chocolate Chip Bundt Cake:
- Make sure to grease your bundt pan well so that the cake will easily come out when you flip it! If little pieces still stick to the pan though, you can sometimes press them back on to the cake. Dusting the cake with powdered sugar will help hide any imperfections. 🙂
- This cake will stay fresh for 3 days at room temperature. Make sure to cover it or keep it in an air-tight container to prevent dryness and to keep out flies.
- Serve this cake warm with whipped cream or ice cream for an extra special treat!

- 2 1/2 cups flour
- 2 1/2 cups sugar
- 2 tbsp cornstarch
- 1 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tbsp vanilla
- 4 eggs
- 1 cup sour cream
- 2/3 cup coconut oil, melted
- 1 cup chocolate syrup
- 1 cup chocolate chips
How to make Chocolate Chip Bundt Cake
Preheat the oven to 325 degrees Fahrenheit. If you have the convection setting on your oven, you should use it so your cake bakes evenly.
In a bowl, mix together the flour, cornstarch, baking pwoder, baking soda, and salt. Set aside.
In another bowl, beat the eggs with the melted coconut oil, sugar, and vanilla. Add the dry mixture to the wet ingredients and stir to combine. Fold in the sour cream gently. Next, divide the batter equally between two bowls.
Add the chocolate syrup and chocolate chips to one of the bowls, and stir to combine.
Grease a bundt cake pan. Pour half of the vanilla cake batter into the pan. Next, pour half of the chocolate cake batter on top of the vanilla batter.
Pour the rest of the vanilla batter into the pan, and top with the rest of the chocolate batter.
Bake for fifty minutes. Test with a toothpick, and if the toothpick doesn’t come out clean, bake another five minutes.
Let the cake cool for ten to fifteen minutes before running a knife around the edges of the pan to loosen the cake. Carefully, invert the cake pan over a plate to remove the cake from the pan.
